Ingredients :

3 1/2-pound roasting chicken, rinsed and patted dry, including the cavity
2 medium lemons, quartered
3/4 teaspoon poultry seasoning
3/4 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon black pepper
2 cups water

Directions :

1. Preheat the oven to 425°F.
2. Coat a broiler rack and pan with nonstick cooking spray. Place the chicken on the rack. Squeeze the lemons evenly over the chicken and place the lemon rinds in the cavity of the chicken.
3. Combine the poultry seasoning, garlic powder, salt, and pepper in a small bowl. Blend well and sprinkle evenly over the chicken. Place the chicken in the oven, pour the water through the slits of the broiler pan, and cook 30 minutes.
4. Reduce the heat to 375°F and cook 50–55 minutes or until a meat thermometer reaches 180°F. Remove the chicken from the oven and let it stand on the broiler rack for 10 minutes.
5. Place the chicken on a cutting board. Carefully pour the pan drippings into a grease separator or a plastic zippered bag. Freeze the drippings for 10 minutes to separate the grease.
6. Remove the grease from the separator or bag, pour drippings into a glass dish, and heat in the microwave on HIGH for 30 seconds. Slice the chicken, discarding the skin, and serve with the drippings.
