Ingredients :

1 medium eggplant, cut into ½-inch slices
Kosher salt
½ cup bread crumbs
2 teaspoons dried parsley
½ teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
Freshly ground black pepper
2 tablespoons milk
½ cup mayonnaise
1 cup tomato sauce
1 can diced tomatoes
1 teaspoon Italian seasoning
2 cups grated Mozzarella cheese
½ cup grated Parmesan cheese

Directions :

1. Lay the eggplant slices on a baking sheet and sprinkle kosher salt generously over the top. Let the eggplant sit for 15 minutes while you prepare the rest of the ingredients.
2. Prepare a dredging station. Combine the bread crumbs, parsley, Italian seasoning, garlic powder, onion powder, salt and black pepper in a shallow dish. Whisk the milk and mayonnaise together in a small bowl until smooth.
3. Brush the excess salt from the eggplant slices and then coat both sides of each slice with the mayonnaise mixture. Dip the eggplant into the bread crumbs, pressing the crumbs on to coat both sides of each slice. Place all the coated eggplant slices on a plate or baking sheet and spray both sides with olive oil. Select the AIR FRY function and cook the eggplant slices in batches in the air fryer oven at 400ºF for 15 minutes, turning them over halfway through the cooking time.
4. While the eggplant is cooking, prepare the components of the eggplant Parmesan. Mix the tomato sauce, diced tomatoes and Italian seasoning in a bowl. Combine the Mozzarella and Parmesan cheeses in a second bowl.
5. Once all of the eggplant has been browned, build the dish with all the ingredient components. Cover the bottom of a 1½-quart round baking dish with a few tablespoons of the tomato sauce mixture. Top with one third of the eggplant slices, one third of the tomato sauce and then one third of the cheese. Repeat these layers two more times, finishing with cheese on top. Cover the dish with aluminum foil and transfer the dish to the air fryer basket, lowering the dish into the basket using a sling made of aluminum foil. Fold the ends of the aluminum foil over the top of the dish before returning the basket to the air fryer oven.
6. Select the BAKE function and set the temperature to 350ºF. Bake for 30 minutes. Remove the foil and bake for an additional 5 minutes to brown the cheese on top. Let the eggplant Parmesan rest for a few minutes to setup and cool to an edible temperature before serving.
