Ingredients :

Rëmoulade:
1 cup mayonnaise
3 tablespoons mustard
1 tablespoon freshly squeezed lemon juice
1 tablespoon capers
1 tablespoon chopped fresh flat-leaf parsley
2 scallions, white and light green part only, sliced
2 teaspoons Louisiana-style hot sauce
1½ teaspoons Cajun seasoning
½ teaspoon garlic powder
½ teaspoon black pepper
Fried Green Tomatoes:
3 green tomatoes
¾ cup all-purpose flour
¾ cup cornmeal, preferably finely ground
1½ teaspoons kosher salt
1 teaspoon black pepper
½ teaspoon cayenne pepper
2 eggs
¼ cup buttermilk (regular milk is an acceptable substitute)
Vegetable oil for spraying

Directions :

1. Combine all the rémoulade ingredients in a medium-size bowl. Cover and chill for at least 1 hour to allow the
flavors to develop.
2. To make the fried green tomatoes, trim the ends off each tomato and slice into ¼-inch-thick slices. Place the
slices on a paper towel–lined plate to absorb excess liquid.
3. Place the flour, cornmeal, salt, black pepper, and cayenne pepper on a second plate, stirring with a fork to
combine. Whisk the eggs and buttermilk together in a shallow bowl.
4. Dip a third of the tomato slices in the egg mixture then dredge them in the flour-cornmeal mixture, shaking off any excess. (Do not coat the tomato slices until right before you cook them.) Spray both sides with oil, making sure to coat the slices well. Place the slices in the air fryer basket.
5. Select the AIR FRY function and cook at 400ºF for 10 minutes, flipping the slices once halfway through. (If you see spots that look like dry flour, spray those with additional oil.) While the first batch of tomatoes is cooking, batter the next batch. Repeat the process with the remaining slices.
6. Serve the fried green tomatoes hot out of the air fryer oven with rémoulade sauce.
