Ingredients :

Cooking oil spray
10 cups fresh corn kernels (from about 12 ears)
2½ cups cherry tomatoes, halved
8 garlic cloves, minced
2 small onions, chopped
2 cups frozen lima beans
8 tablespoons (1 stick) unsalted butter, cut into small cubes
Kosher salt and freshly ground black pepper, to taste
Thinly sliced fresh basil, for garnish

Directions :

1. Lightly coat the sheet pans with cooking spray.
2. Divide the corn, cherry tomatoes, garlic, onions, lima beans, and butter cubes between the two pans. Season with salt and pepper and thoroughly mix to combine.
3. Install the wire racks on Levels 1 and Select AIR ROAST, select 2 LEVEL, set the temperature to 350°F, and set the time to 20 minutes. Press START/STOP to begin preheating.
4. When the unit has preheated, place a sheet pan on each wire rack. Close the oven door to begin cooking.
5. After 10 minutes, open the oven and stir the vegetables. Close the oven door to continue cooking.
6. When cooking is complete, garnish the succotash with the basil and serve.
